Bluebird

I made a fleeting and half-hearted resolution to become a better baker this year.  Fleeting because resolutions are.  And half-hearted because who needs more calories.  Despite that, I actually have baked more than ever this year.  (See: birthday cake.)  I even considered going back to culinary school to enter the pastry division, but I really wouldn’t want to see my size after than endeavor.  It was one thing to twist off lobster heads and break down pigs, but to stand in a room filled with butter, sugar, and eggs for hours on end?  I don’t think I’d come out of that unscathed.

Anyway, late last night I needed to make a treat, and I wanted to throw together a cobbler, but cobblers aren’t portable, so I went with cobbler cookies.  If that’s a thing.  Actually, it doesn’t really matter if it’s not a thing because it’s a delicious thing.

Step 1. Get a bunch of blueberries (I used four 6 oz packs).  Wash and de-stem.  Mix with 3/4 c sugar and a few splashes of lemon juice.  (Careful mixing — you don’t want too many squished berries.)

Step 2. Mix up your cobbler dough: 1 c sugar, almost 3 c flour (this is why I’m not a baker), a sprinkle of baking powder, an egg, and 1 c butter.  I did it in a food processor, but you can do it with a fork or if you’re fancy, a dough cutter.

Step 3. Grease your pan, fill the bottom with half of the dough mix (very crumbly stuff, so you’ll do a little pressing), add the blueberry mix on top, and finally, cover with the second half of the dough.  400 for about 40 mins.  Cool and cut.

Et voila, blueberry sandwich!   Someone try this with strawberries, please.
